You can get a motor mount that fits most canoes. Ottawa Valley Canoe & Kayak sell them. http://ovckonline.com

You could use a small 1hp. safely on your canoe. You shouldn't go faster than you can paddle as the canoe wasn't engineered for that kind of stress. Same goes for towing a canoe.

4 stroke is the way to go, of course, and Honda motors are among the very top. I certainly love my 50hp, never knew an outboard could be that quiet, reliable, and easy on gas.

A tolling motor would be lighter and quieter, but the battery would be heavy in a conoe, and battery life would limit your range. Not to mention having to charge it frequently.

One of the things I noticed when I was looking to replace my Johnson was that there were very few Honda motors for sale used. OK, the 4 stroke isn't that old a model, but my feeling was that people felt no reason to change.
