The Tay is perfect for you. My wife and I just did the whole stretch to the locks and back. It took us about four hours, but we were in single kayaks.
One idea would be for you to depart from the Beveridge lock station so that you can go against the current at the start...thus when you get tired, you simply turn around and it is easy going to get back.
The only areas with slightly demanding paddling are between Perth and the Tay Marsh, but there was definitely nothing to be concerned with.
Another idea would be to go from the basin to the marsh and back. The stretch from the marsh to the locks is not the highlight. Hanging around the marsh is fun, lots of herons and osprey to look at.

Have fun!
By the way, there is no such thing as being too cautious with water sports. Take it easy and progress at your own pace.
Now if only I can heed my own advice...
