Found a recomendation for the most stable kayak for photography is a kayak that is approximately 10' long and 30" wide and constructed from plastic. These have a large cockpit opening so that your photography gear is easily accessible.

You can check it here (url]http://www.outdooreyes.com/photo35.php3[/url]

I use a Current Designs Kestrel 120 High Volume for photography (I am a wildlife photographer) I equiped mine with a rudder so I can steer while I shoot. It is a Rec type boat and its very stable. I would recommend it or the 140 Kestrel (come with a factory installed rudder and has 2 watertight hatches/bulkheads) mine I had to modify to install the rudder.
Paddlin' a P&H Quest LV or a Current Designs Kestrel 120 TCS all over the Garden State!!
