This site has had several posts relating to kayak fishing.
Searching on the key word "fishing" should pull up what has been posted plus some links to other sites with kayak fishing articles. (see top of page next to "new question" button)
As with angling from a power boat, or the shore, things can easily get out of hand and expensive.
As for enjoyable and safe, I'd suggest starting with some basic paddle strokes and basic rescues training. Usually this can be done with out owning a kayak or any gear.
Look for American Canoe Association (ACA) or British Canoe Union (BCU) certified instruction.
Your ability to get to where you want to go, and stay there, is directly related to how well you can dance with (paddle) your kayak. Basic rescues builds confidence in your ability to get back in (or on) your kayak when you find yourself in the drink and your boat upsidedown.
If this seems like fun, then it only gets better with a rod & reel.
