Old time canvas and wood canoes (and some newer ones) have done the double strip. They have wooden spacers in between the strips at frequent intervals. It can look pretty darn good. The strips are usually rounded on the tops and bottoms. Take a look at some strippers and some wood / canvas ones that've been done that way before you start.

If it is a cedar canvas look in the the wood and canvas canoe (author jerry Stelmok, isbn 0-88448-046-1) for some tips on gunwale (the Gunwale or gun wall is composed of an inwale and an outwale).

If you want to replace the gunwale's here's a place, You can get a set of gunwale from the carlisle canoe company call roger foster (905) 659-0883 (he is near milton ontario which is near toronto).

Are the gunwale ends bad, is the rest of the gunwale in good shape? what about the decks? if the gunwale ends and the decks both bad you might want to replace the end (deck and gunwale) with a solid piece of wood (cherry is nice) and not fuss with the whole gunwale.
